Italian Minestrone Soup is one of the best Vegetable Soup Recipes. This recipe has a lot of variations in terms of the vegetables used. I have used onion, capsicum, French beans, cabbage, carrot & tomatoes in my soup. The basic spices you need are just salt, black pepper powder & oregano mix. I have use fusilli pasta. This pasta is also known as spiral pasta. You can use any pasta of your choice.

This is an Italian recipe and this is also known as the Italian tomato pasta soup. This is a Vegetarian Minestrone Soup Recipe however there is no fixed recipe for minestrone, since it can usually be made with whatever vegetables are at one’s disposal. Along with the vegetables, it can also contain meat, or can be made with animal bone-based stock (such as chicken stock).

This soup is also called a one pot meal as it is a complete meal replacement soup since it contains cooked vegetables, sometimes meat or chicken, pasta and some recipes even use rice. Kids love this soup.

The Authentic & Traditional Recipe is very elaborate. Follow this simple Step-By-Step recipe to make this amazing soup in the comfort of your kitchen.

Instructions
  1. Heat 1 Tbsp. Olive Oil in a pan.
  2. After the oil heats up, add 6-8 Pcs of Finely Chopped Garlic Cloves.
  3. When the garlic starts to crackle, add 1 Finely Chopped Onion and saute for about 30 seconds.
  4. After sautéing the onions for 30 seconds add 1 Pcs Finely Chopped Small Carrot, 1/4 Cup Finely Chopped Cabbage, 15 Pcs Finely Chopped French Beans, 1 Pcs Finely Chopped Capsicum & 4 Pcs Finely Chopped Tomatoes. Mix well.
  5. After mixing the vegetables season with 2 Tsp. Regular Salt, 1 Tsp. Black Pepper Powder / Kali Mirch Powder & 2 Tsp. Oregano Mix.
  6. After the seasoning add 3 Tbsp. Tomato Ketchup. Mix the vegetables with seasoning and the ketchup.
  7. After mixing the ketchup and the seasonings with the vegetables add 200 Grams Tomato Puree & 4 Cups of water. Mix well.
  8. After mixing the puree add 1 bowl Fusilli Pasta and boil on high flame to cook the vegetables. This would take around 8 to 10 minutes. Do not overcook the vegetables and pasta. They should be a bit crunchy.
  9. After 10 minutes of boiling turn off the heat / flame and dish out in a serving bowl.
  10. Garnish with grated cheese and finely chopped spring onions if available.
  11. Out Minestrone soup is ready and this is a full meal replacement soup. Serve with Garlic Bread, Soup Sticks & Bread Croutons.

Tips: Do not overcook the vegetables in the final stage of cooking. The vegetables should have a little crunch to them.
